
Have you ever thought you'd like to buy your meat direct from a small family farm but don't know where to start? Would you like to be able to meet the farmer that raises your food at a farm that's nearby so you can take your family there? Would you like to stop buying your meat from an industrial food system and instead buy local, sustainable and humanely raised meat? Our Porkapalooza will show you how.
A professional Chef and Wisconsin Sausage shop owner will demonstrate breaking down a hog into typical pork cuts while he talks about various ways to prepare them at home. We will then work in small groups for a hands-on sausage making session where you will mix up a recipe and learn to stuff casings using equipment suitable for home use. By the end of the class you will know enough to confidently shop directly from the farm, save money, and have some new recipes to try at home.
Course includes 3 hours of interactive demonstration and hands-on sausage making. You will also take home a portion of the hog that was processed (approx. 18-20 lbs.) and the sausages that you made in class. We limit attendance to only 8 people so that you will have a front row seat and be able to ask questions as we go.

John recently took over Hometown, a USDA inspected facility where he custom cuts beef, pork, and lamb. He supports small, local, producers in the region as he produces artisan sausages, smoked meats and gourmet cuts.
