
Upon making my salad for lunch, I realized it’s probable that many people don’t know a food-prep secret. A time-saving, nutrient-increasing, antioxidant boosting secret. It’s about carrots. Do you know what I’m about to say? Another hint…it’s about peeling the carrots. I bet you got it now – you don’t have to peel carrots! I stopped years ago after having learned this and much appreciate that every time I take a carrot from the fridge, I just have to scrub it clean and can eat it “like a bunny” (as the kids like to say) or start chopping or dicing. It’s not just me saying this; the UK is home of the Carrot Museum where they boast of the peel’s extra nutrients, antioxidants and vitamins. So, when you take home your next bunch of organic carrots, just wash ‘em well and enjoy. Now, don’t keep this secret. Spread the word and save time while getting more of the good stuff in!
