Spring Road Getting Chicago Chain Restaurant: City

ELMHURST, IL – Chicago's Parlor Pizza Bar is coming to the Spring Road business district, the city confirmed Wednesday.

"It is official!" Elmhurst's spokesperson, Michael Queroz, said in an email to Patch.

It is set for the old Silverado Grill site at 447 S. Spring Road, he said. Silverado, which opened in the 1980s, closed in fall 2022.

A new 7,000-square-foot building is on the property, bigger than Silverado's 4,000.

Parlor has three Chicago locations – the West Loop, Wicker Park and River North.

On its website, Parlor says it serves "creative wood-fired pies, bold drinks and good vibes all day," with spacious patios, local beers and rotating seasonal menus.

Patch left messages this week with Parlor and the property's owner, Anthony Gambino III.

Gambino is no stranger to Elmhurst's restaurant scene. He also has Doc's Victory Pub, Golden Boy Barbecue and Victory Meat & Seafood in Elmhurst. Like the new restaurant, Doc's is in the Spring Road district.

In early 2025, Parlor appeared in the city's regular list of commercial projects in review. It was being planned for the Spring Road location.

As recently as January, though, Gambino told Patch he was unsure what type of restaurant would open at the Silverado site.

At the time, he said he would either get a tenant or develop a restaurant concept himself. But he hoped it would open in the fall.
