Coffee Shop Planned to Replace Starbucks at Main Commons Shopping Center

Brue Coffee will focus on "local organic fare," owner says.

Coffee drinkers in the city of Evanston could be in the midst of switching out corporate for local, at least at one location.

According to the Evanston Review, Peyton Brooks has plans to open his own coffee shop, Brue Coffee, at 2438 Main Street, the site of a Starbucks location in the Main Street Commons Shopping Center that has since relocated to Skokie.

“We’re going to be serving as much local organic fare as possible,” said Brooks. “So all our beans are hand-roasted. All the foods are going to be from local vendors, I think no more than three miles in either direction — as much as from Evanston as possible.”

Brooks, who still needs to wait on a few approvals before he opens, is a former Starbucks barista, having worked at the one in Glencoe.

He told the Review the store’s setup is expected to remain intact and new appliances and a high bar against the windows will be added.
