Glenview Entrepreneur To Open Italian Restaurant in Glencoe

The upscale dining option opening this summer is the 22nd restaurant for Rick Raschillo.

A new, upscale Italian dining option is heading for downtown Glencoe early this summer.

Rick Raschillo, a Glenview entrepreneur, will open Cibo Trattoria - his 22nd restaurant in late May or early June - at 667 Vernon Ave., the Glencoe News reports. Raschillo already owns Fitness Cafe in Glenview, among others.

Stationed at the recently closed Dewey’s site, Cibo Trattoria will operate seven days a week for lunch and dinner. It will include 80 seats (tables and booths), a community bar and two televisions - according to the Chicago Tribune.

With the location, the restaurant could become a destination for the Writers Theatre audience since a larger theatre is opening at 325 Tudor Court in 2016. Raschillo has said to the Tribune Cibo Trattoria may add a late night menu.

Raschillo also owns Air Fitness, a personal training facility in downtown Glencoe, across the street from his new restaurant.
