- “String cheese is simply Mozzarella cheese that when heated, become elastic, similar to silly putty in the stretching process. String cheese is basically a mini mozzarella loaf that kids love and is lots of fun to eat”
- Why does Swiss Cheese have holes?
- In the typical 60-day aging process of swiss, the starter cultures and acids in the milk cause a natural reaction in the cheese to create carbon dioxide gas. This Co2 gas blows up inside the cheese to create “eyes” or holes in the Swiss cheese. Interesting tidbit… Many researchers feel that as feed for cows have become cleaner and of higher quality, the eyes in Swiss cheese have become smaller and sometimes non-existent.”
