Recipe: Frozen Rhubarb Daiquiris

Happy spring!

As Spring comes closer, not yet though....we should see Rhubarb begin to spring up in our local grocers.  Tired of the usual creation? Try this cocktail on for size. It's so amazing and refreshing. I came across this from my Aunt Alice in New Mexico lounging by the pool, how is that for service!

I found my own spin on the recipe by leaving in remnants of the rhubarb in my drink, that's me though, I liked it. Try your own spin.

6 cups raw or frozen rhubarb

1/2 cup water

1 1/2 cups sugar

1-2 liter bottle of lemon lime soda (squirts works best)

1-12 oz. can of limeade or lemonade

1-1/2 cup light rum

Combine rhubarb and water and boil over medium heat. Stir in sugar until dissolved and rhubarb is soft. Remove and strain. Let liquid come to room temp.  Combine soda, juice and rum with rhubarb liquid and freeze.  Stir occasionally until frozen.
