Curried Short Ribs

I made this Friday, would I make it again YES it was so good and the house smell heavenly.  It is not hard it goes in the crockpot, you just have to brown the short ribs first and the rest is the crockpot.  I do hope some one will try this.  I served it with Mash Potatoes and cucumbers.


Curried short ribs

 prep time: 15 minutes cooking time: 8 hours yield: 4 servings English-cut short ribs are slowly braised in fragrant curry to yield succulent meat that you will savor with every melt-in-your-mouth bite. Don’t be alarmed that you’ll need four pounds for four people—the bones and the fat make them heavy but they shrink in size as the fat slowly cooks down. My husband exclaimed that these ribs were the best dinner I ever set on the table. Pretty good for only ten ingredients and virtually no time in the kitchen!

 2 tablespoons coconut oil
 4 pounds bone-in beef short ribs, cut into 3-inch pieces
 Salt and pepper
 1 13.5-ounce can coconut milk
 1∕3 cup tomato paste
 1∕3 cup red curry paste
 4 cloves garlic, minced
 2 tablespoons fish sauce
 2 teaspoons fresh lime juice
 1 teaspoon ground ginger
 ½ yellow onion, sliced
 1 pound carrots, peeled

 Place the oil in a large pot over medium-high heat. Season both sides of the short ribs with salt and pepper. Place in the pot and sear on all sides, about 6 minutes. Place the coconut milk, tomato paste, curry paste, garlic, fish sauce, lime juice, and ginger in a bowl and whisk to combine. Add the sauce and onions to a slow cooker. Place the short ribs on top, spooning some sauce over the meat. Cook for 8 hours on low, basting and stirring once halfway through. Skim off and discard all of the fat that has accumulated at the top of the pot. Add the carrots and continue cooking for 1 hour more. tidbits: English style short ribs are beef ribs that are cut parallel to the bone and typically segmented into three-inch sections. Each short rib contains beef, fat, and bone which, when slowly braised, yields a succulent and flavorful dish. While I highly recommend trying the recipe as is, grass-fed short ribs are pricy and may need to be saved for a special occasion. Chuck roasts or stew meat are great budget-friendly substitutions.
