Hearty White Bean & Kale Soup

Serves: 6-8

1 cup carrots, chopped
1 cup celery, chopped
1 medium yellow onion, chopped
3 medium tomatoes, blanched to remove skin, and chopped
5 cups chopped kale (about 2 inch pieces)
2 15.5 oz cans white beans, drained and rinsed
40 oz vegetable stock
1 cup water
2 tbsp coconut oil
2 tbsp fresh sage, coursely chopped
1 tbsp fresh thyme
½ tsp dried basil
½ tsp oregano
½ tsp paprika
2 garlic cloves, minced
1 oz parmesan cheese rind
2 tsp salt (or more to taste)
1 tsp pepper (or more to taste)

In a large sauce pan, heat coconut oil over medium heat
Add the chopped celery, carrots, and onion and saute until colors turn bright, about 10 minutes
Add the minced garlic, chopped sage, thyme, basil, oregano, and paprika and continue to saute for 3 minutes
Add vegetable stock, water, white beans, tomato, kale, cheese rind, salt & pepper, and bring to a boil
Reduce heat and let simmer (covered), about 20 minutes or until veggies are soft
Garnish with fresh parmesan cheese (optional)
