Born in Granada, Spain, Emilio Gervilla worked at his grandfather's bakery and tapas bar. In 1988 Emilio opened his own restaurant, Emilio’s Tapas, in Hillside, Illinois. Both a culinary and cultural experience, the restaurant serving authentic European Spanish tapas was an instant success. It was named one of Chicago's Ten Best New Restaurants by the prestigious Chicago Magazine; a host of awards followed. He later opened Emilio’s Tapas Sol y Nieve near Navy Pier in Chicago. Emilio proved that dreams do come true, and if you can't go home again you can bring home along with you.
