Josephine Olson (nee Risoli)

Of Palos Heights, IL passed peacefully at home on 08/03/2020. She was born in Blue Island, IL on April 28, 1930. She graduated from Blue Island Community High School in 1948. She married Byron Olson in September, 1955 in Blue Island and they settled in Palos Heights in 1961.

She is survived by her three loving children, Byron George (Joanne) Olson, Jodie Ann (nee Olson) Vaughn, and Gina Maria Olson (Amy Johnson). Josephine was an adoring grandmother to Jordan Patrice Murphy, Hunter Chase Vaughn, Byron James Olson, and Maria Josephine Olson. She was beloved to her nieces and nephews, great-nieces and nephews and great-great-nieces and nephews. She will be missed by her countless dear friends.

Josephine was one of eight children born to her Italian immigrant parents, Rafael Risoli and Vincenza (Martino) Risoli. She was preceded in death by her parents, her husband Byron, and her sisters and brothers.

Josephine was known as an excellent cook and baker and wasn’t content until her guests were eating. Her ravioli, which she made for her extended family for Easter and Christmas Eve celebrations, were legendary. Her pizza and lasagna won over more than one of her initially-skeptical in-laws. She worked many jobs over her lifetime to support her family, her last was at Palos Community Hospital until she retired in 1995.

Visitation Friday, August 7th from 8:30 a.m. until time of prayers 10:30 a.m. at the KERRY FUNERAL HOME & CREMATION CARE CENTER, 7020 W. 127th Street, Palos Heights, proceeding to Incarnation Church, Mass 11:00 a.m.
