Students with food allergies - and those looking for healthier options – are enjoying an expanded menu at Louisiana College.
Louisiana College Dining by Sodexo, with support from its district dietitian, Kelsey Rosenbaum, MS, RD, LDN, has developed new menus, increased student awareness of healthy options on campus, expanded vegan and vegetarian choices, and provided education and training to staff members to better serve students with allergies and celiac disease.
“Executive Chef Peter Falcone and I are always brainstorming new things to do for the students,” said Rosenbaum. “We’ve introduced grain bowls, smoothie stations, and even a fun vegan tasting night. Every time I talk with Chef Peter, he has new ideas.”

Rosenbaum specializes in a variety of nutrition-related areas including food allergies, chronic illnesses, and how to build a balanced plate at any location on campus. She has a Bachelor of Science in Nutrition from Mississippi State University and completed her dietetic internship and Master of Science in Public Health Nutrition at the University of Tennessee, Knoxville. Rosenbaum was named Louisiana’s Recognized Young Dietitian for 2015-2016, and one of Foodservice Director’s Rising Stars for 2018-2019.
Supporting schools throughout Louisiana and Texas, Rosenbaum was the first AllerTrain Master Trainer in the state and continuously trains staff to provide safe and delicious food for students with special dietary needs.

With a passion for food and nutrition, Rosenbaum believes in empowering people to lead healthy lifestyles through education and access to healthy foods.
