JUST Egg breaks at Tulane University, first campus in Louisiana

Tulane University became the first campus in the state of Louisiana to offer JUST Egg, a sustainable plant-based protein option.

On April 4, Bruff Commons at Tulane University became the first dining hall in the state of Louisiana to offer JUST Egg as a delicious, healthy, and sustainable plant-based protein option.

JUST Egg is a non-GMO, plant-based, protein-packed egg product.

“I’m a fan,” said Tulane student Natasha McCullough. “I’m vegetarian and I think JUST Egg is a good alternative! I appreciate having more options.”

The primary ingredient in JUST Egg is mung bean, which gels and cooks up just like a chicken egg. The mung bean is a protein-rich legume that’s been cultivated around the world for thousands of years. A staple of Asian diets, the mung bean is a highly versatile ingredient and often used for soups and stews.

JUST Egg scramble contains 5g of protein per serving and a JUST Egg patty contains 10g of protein. It is free of cholesterol, saturated fat and artificial flavors. Turmeric and carrot are used give JUST Egg its natural golden color.

The product is sustainable as it requires 77 percent less surface and groundwater and has a 40 percent smaller carbon footprint than leading brands of chicken eggs.

"I think that it is a great way for our campus to become more sustainable,” said Tulane student Natalie Pransky who is vegan.

Tulane students can order JUST Egg at the made-to-order omelet station or grab a fluffy, filling JUST Egg patty to top an English muffin at the build-your-own sandwich bar.

Due to the increasing demand for more plant-based options on campus, JUST Egg products will be a permanent addition to the Bruff breakfast menu.

For the roll out, campus dietitian Kelsey Rosenbaum, MS, RD, LDN was on hand with her intern, Jamie Palefsky, distributing informational pamphlets about the product.

“As many students become aware of the environmental impacts of animal-based proteins, they are choosing to go plant-based,” said Rosenbaum. “These students are also looking for great food, too. JUST Egg is an ideal product since it is plant-based, environmentally-friendly, and packed with flavor.”
