Korean guest chef takes over Tulane Dining food truck
Chef Jeong Oh "Jay" took over Global Mobile Bistro, the campus-based food truck that serves international street food.

Tulane University students were treated to authentic Korean barbecue this past semester when Chef Jeong Oh “Jay” took over Global Mobile Bistro, the campus-based food truck that serves international street food.
The take-over was facilitated by Tulane Dining’s district executive chef Wesley Turnage, CEC, CCE, CCA, FMP.
Chef Oh prepared his specialties for 350 food truck customers on the Berger Family Lawn. Later in the week, the chef served Korean rice bowls inside the Lavin-Bernick Center Food Court.

“The Korean barbecue bowl option was phenomenal with the lettuce. All the toppings rocked, and the tofu was the most flavorful I’ve had at Tulane,” said sophomore student Paige Montfort.
Chef Oh of Seoul, South Korea, learned traditional Korean recipes and techniques from his mother and grandmother. After high school, he joined the Korean army as a sous chef and learned varied cooking styles and ingredients.

Chef Oh attended culinary school and came to the United States in 2001 where he worked as the head chef in several Japanese restaurants. He is now corporate chef for Wang Korea, a Korean food brand that carries authentic Korean and Asian staples like kimchi, seasonings and noodles. His first task for Wang Korea was to develop a Korean Japanese fusion poke concept.
Among Chef Oh’s featured dishes at Tulane’s Global Mobile were spicy kimchi fries and spicy tacos, burritos, and quesadillas with a choice of chicken, pork, beef bulgogi, and tofu-mushroom.
“The Korean dishes at Global Mobile were beautiful and appetizing. My first bite into the fries exceeded my expectations, “said freshman student Emily Warshowsky.
Based on popularity with Tulane students and faculty, chef take-overs will be on-going during the new school year.
