Tulane Dining partners with Forward Food

Demand for plant-based dining options inspired Tulane Dining Services by Sodexo to partner with Forward Food.

Popular demand for plant-based dining options inspired Tulane Dining Services by Sodexo to partner with Forward Food, a campaign led by The Humane Society. The initiative supports a shift of menus in Bruff Commons Dining Room, Tulane’s main residential dining facility, away from meals centered primarily on animal products and puts more plant-based food on plates.

Tulane Dining Services hosted Forward Food on campus for a two-day training in October to share information about plant-based dining trends, foods, recipes, and strategies.

Campus dining teams and Forward Food chefs worked together on a breakfast presentation, chef assist, and sampling event. Featured dishes included cauliflower buffalo wings; carrot osso bucco with creamy polenta; sweet potato and black bean enchiladas; and Brussels sprout and sweet potato salad.

Invitees to the Forward Food experience included thirteen members of the newly developed Campus Services Advisory Board Vegan and Vegetarian subcommittee.

“I loved the [plant-based] tasting and look forward to seeing more vegan options on campus,” said Tulane student Lisa Smith, Class of 2019.

Dining Services is analyzing all data collected from the Forward Food event, meetings with Tulane Veggie Club, and the subcommittee to identify most requested items for the expanded plant-based menu program to launch in Bruff Commons in January 2019.

Plant-based enhancements will most likely include a vegan dessert cycle using Forward Food recipes; offering two weekly vegan sandwich options; vegan alternatives for tacos; incorporating plant-based protein pasta options; vegan pizzas and soups; and a vegan breakfast menu.
