$25 Dinners: Chicken and Tzatziki Pitas

Eating healthy doesn't have to break the bank.

If you’re looking for a quick and easy way to enhance an everyday meal, consider adding some Greek flair to a simple chicken pita. In total, this dinner only takes about 15 minutes to prepare and it’s a perfect light and healthy option now that Spring has finally arrived.

Ingredients
2 boneless, skinless chicken breasts
¼ tsp cayenne pepper
¼ tsp salt
¼ tsp black pepper
1 cup low-fat plain Greek yogurt
1 cucumber, seeded and grated
1 garlic clove, finely chopped
4 pitas
spinach, uncooked
1 tomato, chopped

  1. Season the chicken with the cayenne, salt and black pepper and cook in a skillet over medium heat for 6-7 minutes or until cooked through.
  2. Meanwhile, mix yogurt, cucumber and garlic in a small bowl and sprinkle with salt and pepper.
  3. Cut the chicken into bite-sized pieces and then fill your pita with a scoop of the tzatziki sauce, spinach, tomatoes and chicken. Enjoy!

*Makes 4 servings, about 270 calories each. Cost of meal is around $3.50 per serving.
