For less than $25, you can cook up a delicious, nourishing meal the whole family will love. Find these ingredients at Safeway and follow the recipe below for tasty stuffed peppers. You'll need about 5 minutes of prep time to cut up all the vegetables and then approximately 45 minutes to cook the meal.
Ingredients:
4 red or yellow bell peppers
1/2 lb. ground turkey (or lean ground beef)
2 cups brown rice
2 cups tomato sauce
1/2 cup onions, chopped
1/2 cup mushrooms, chopped
1/2 cup zucchini, chopped
1/2 cup carrots, chopped
1 tbl olive oil
1. Brown the ground turkey over medium-high heat (approximately 10 minutes) and
start the brown rice cooking at the same time.
2. Sautee the onions, mushrooms, zucchini and carrots in the olive oil over
medium-high heat (approx. 5 minutes).
3. Cut the tops off the bell peppers and scoop out all the seeds.
4. Stir the ground turkey into the brown rice and pour in the tomato sauce,
decrease heat to a simmer. Add vegetables.
5. Fill the pepper shells with the meat, rice and vegetable mixture. Place
the peppers on a cooking sheet and pop them into the oven until they are
cooked through (approx. 30 minutes).
*Makes 4 servings, approximately 300 calories each. Cost of meal is
approximately $5.50 per serving.
