In Season at the Farmer's Market: End of Wintertime Fare
As the Kensington Farmer's Market prepares for spring, market goers can find apples, sweet potatoes and other Winter fruits and vegetables.
Choosing to eat foods that are in season will allow consumers to enjoy the best flavor of the item and obtain the most nutritional value from it. offers in-season produce. Local farmers will share their wealth of knowledge about what's in season, what's on the way out, and what consumers can look forward to as winter turns to spring.
As the Winter season comes to an end, Rabbit Hill Farm brought its selection of apples, pears, tomatoes, sweet potatoes and a variety of potatoes including blue, red, Kennebec, Russet and Eva potatoes.
“The potatoes look a little shriveled but some of your shriveled potatoes make the best French fries,” said John Hilker, owner of Rabbit Hill Farm.

The farm is gearing up for the spring season. Next up are asparagus at the end of April, according to the farm owner's dad, John Hilker, Sr.
Strawberries will be one of the next fruits making its debut in 2011 at the end of April, with blueberries and blackberries expected to arrive in June.

Rabbit Hill Farm is working on growing more fruits and vegetables in his greenhouse so that a variety will be available each week at the Kensington Farmers Market.
Oven Baked Sweet Potato Fries Ingredients:
4 large sweet potatoes
2 tbs vegetable oil
salt (to taste)
pepper (to taste)
(For spicier fries add taco mix or cayenne pepper to the mix)
1. Preheat oven to 450 degrees.
2. Cut potatoes into wedges, then toss in oil, salt and pepper.
3. Spread wedges on baking sheet in single layer.
4. Bake 20 minutes then flip, bake 20 more until browned.
