Izzy’s Chocolates, which are made in Baltimore by hand, are made with prime Belgian Callebaut chocolate. Callebaut is one of the few chocolate makers that still selects, roasts, and grinds its own cocoa beans. The beans are roasted in the entire shell to protect them and keep intact the subtle aromas and other components. Grinding is made to reach very fine particles; pure cocoa butter and natural vanilla are added to complete the perfect taste and texture. Plum, Apricot, Pineapple are the classical Izzy's Chocolate flavors that are smooth, delicate flavors, not overly sweet. Mango, Coconut, Cranberry is for those adventurous folks. You won't find mango and cranberry with chocolate very often. Izzy's Bites are smaller chocolate pieces (1/2 oz) for those pairing with wine or any other type of drink. Izzy’s Chocolates is owned by Peruvian born Debora Varon, who now resides in Baltimore, Maryland. Varon has a Masters degree in Food Science. Varon states, “when making chocolate use ingredients of the highest quality.”
