Ingredients:
- 1 baguette, thinly sliced
- Extra virgin olive oil
- 3 tablespoons unsalted butter
- 6 ounces fresh morels
- 3/4 cup thinly sliced leeks
- 1 teaspoon fresh lemon juice
- 1 tablespoon chopped Italian parsley
- 2 teaspoons fresh thyme leaves
- Sea salt and fresh pepper to taste
- 5 ounces local goat cheese
- 3 ounces gruyere cheese, grated

Brush one thinly sliced baguette with extra virgin olive oil. Bake at 325°F for 10-15 minutes until lightly toasted.
In a skillet over medium heat, melt the butter. Add morels and sauté until soft, about 2 minutes. Add leeks and cook for 4 minutes.

Stir in lemon juice, parsley and thyme. Season to taste with sea salt and pepper.
To assemble the crostini, spread the goat cheese on the toast and add the morel mixture. Sprinkle gruyere cheese on top. Return to oven for 5 minutes and serve.
