Who's Behind the Counter: Victoria Trcka and Stefanie Parsons at The Cow

Two Cow employees talk about what makes a good customer, their favorite ice flavors and more.

The Cow, the frozen custard and Italian ice shop, is a Reisterstown spot so popular in the community that it was renamed years ago for the signature cow that stands out front, facing Reisterstown Road.

Victoria Trcka and Stefanie Parsons are all too familiar with The Cow’s popularity, Trcka having worked there for three years, Parsons for two.

Trcka and Parsons, employees and friends, sat down with the Patch to talk about what makes a good customer, their lack of spare time and more.

Parsons: It’s a really fun environment. We all get along really well.

How at the customers at The Cow?

Trcka: For the most part, good. There are some that are a little questionable sometimes.

Parsons: They’re good! They’re normally pretty friendly and happy.

What makes a good customer?

Parsons: They know what they want.

Trcka: [They] speak clearly, loud.

Parsons: Not yelling, though.

What do you like to do in your spare time?

Parsons: What spare time?

Trcka: Go to the gym.

Parsons: Hang out with my friends.

What’s the first thing you do after you get home from work?

Parsons: Sleep. I work nights.

Trcka: She works nights and I work mornings, so it varies.

What sets The Cow apart from other ice cream places?

Parsons: It’s family-friendly. We interact with the customers more, and it’s not just, ‘Come, get your ice cream and leave.’ We’ll talk to people.

Trcka: And ask them how they are.

What’s your favorite flavor of Italian ice?

Parsons: Mocha chip.

Trcka: Cotton candy.
