
With roughly 5 percent of the U.S. population estimated to be vegetarian or vegan, it looks like nationwide restaurant chains are increasingly trying to cater to that niche market.ย
According to an article in The Baltimore Sun, Chipotle, known for its burritos that normally include a hefty portion of meat, has chosen Baltimore as one of the test regions for a new vegan option. The meatless choiceย will be available as soon as Oct. 21.
The item, called Sofritas, is available in burritos, tacos, burrito bowls, or salads. It includesย organic tofu, which isย made from Hodo Soy Beans, mixed with chipotle chilis, roasted poblanos, and a blend of spices, according to the Chipolte web page dedicated to the new item.

Sofritas will be available in Baltimore-area restaurants, as well as Washington D.C., locations. The option is already offered in a number of states, including California, Colarado, Oregon, Idaho, Utah, and Washington state, as well as in Chipotleย restaurants in Vancouver, British Columbia, according to the Sofritas webpage.
With more than 10 restaurants in the Balitmore region, and a similar number in the Washington, D.C., area, Maryland vegetarians and vegans will have many opportunities to get their tofu fix.ย
