Veggie Galaxy is the diner-style vegetarian dream world of Adam Penn, who founded the restaurant in 2011 in the Central Square neighborhood of Cambridge.
"We’re thrilled to bring back our pre-pandemic hours and welcome guests earlier in the day," said Penn. "This promotion is our way of saying thank you to our community for their continued support while giving new customers a chance to try something from our incredible breakfast menu."
The restaurant is co-owned by Michael Bissanti who said that, with this move, it feels like the pandemic is "finally over."
Bissanti and Penn have also welcomed a new member to the ownership team of Veggie Galaxy, and he should be familiar to local sports fans.
Veggie Galaxy announced that New England Patriots defensive lineman Deatrich Wise Jr. has joined the ownership team. Wise has been vegan since 2017 and, apparently, a frequent Veggie Galaxy customer over the last seven years.
