Locavore Dinner

A recipe for a delicious, easy meal using all ingredients purchased at the ABFM.

Last Sunday I went a little crazy at the ABFM and did some impulse buying at Samira's Homemade, one of our new vendors.  Maybe I was hungry, or maybe I just wanted to make sure Ragab got a good introduction to our market.  But in either case, I came away with a container of Ragab's olive mix, fresh eggplant salad, and a kind of whole wheat flat bread he makes that's covered in herbs and seeds which looked too good to pass up (and at the rate they were being snapped-up I was lucky to have bought one at all!).  What I did with all of that turned into a delightful al fresco dinner.  By combining it with a green salad of local lettuces, and a chilled bottle of Coastal Vineyards un-oaked chardonnay, my husband and I dined in locavore splendor.  

Here's what to do:

Take one, round Samira's Homemade seeded flat bread--white or whole wheat--and place on a cookie sheet.  Drizzle the bread with some fruity, fresh (check both the sell-by AND harvest dates) extra virgin olive oil.  Spread Samira's eggplant salad all over the bread and top with lots of sliced olives (use a variety or all one kind).

Next (and here's the improvisational part) top all of that with whatever left-over protein you happen to have.  I had some organic, local chicken which I shredded and tossed all over the top.  Use what you have--try local lamb, Maine crabmeat, or local cheeses.  Sprinkle the top with some sea salt, a few grinding of black pepper, and then cover loosely with foil (you don't want the bread to dry out, but you do want the ingredients to warm).  

Place in a 350 oven for about 15 min. or until the bread feels warmed through.

Cut into wedges and serve like pizza, but use a fork and knife.  I'd say it could serve 2-3 people.

And that's it--easy, fast, delicious and healthy.  AND you'll be supporting a local business and the farmers market!
