More Vegetarian-Friendly Noodles To Come To Boston

Honeygrow is planning to open a Minigrow on Summer Street in downtown Boston near South Station.

BOSTON, MA —A Philadelphia-based restaurant specializing in "create-your-own" stir-fry dishes recently opened in the Seaport and Fenway and now they're planning to open two more mini locations- this time on Summer Street and in the Back Bay.

Honeygrow is planning to open its little sister concept restaurant Minigrow on Summer Street in downtown Boston near South Station, according to the city's licensing board page. The restaurant recently opened its first Minigrow in Chicago. The concept is similar but billed as a more streamlined simpler version of Honeygrow.

If you haven't been to the Seaport or Fenway Honeygrow Justin Rosenberg's idea in 2009 while he was getting his MBA and realized he didn't have many solid food options as he was going vegan. It took 93 rejections from investors before the 94th one gave him a chance. He opened his noodle shop, which is a play on the phrases "honest eating" and "growing local" in 2012 and have grown to have some 22 total locations specializing in a choose your own adventure assembly line of Asian-inspired noodles and toppings.

Although there's not a ton of information out about Minigrow, it seems to come from a sense of restlessness with the original create-your-own Honeygrow.

"How could we serve up our specially designed noodles, housemade sauces + dressings into cities far + wide?" reads a post on his website. "We went into the kitchen, kicked ideas around with our Chef, and what we came out with is minigrow. a streamlined experience from start to finish that meets our seriously high standards. served up in a way that lets you get creative. straight up nourishing foods + and no bs."

Fun fact, because Rosenberg's wife has a peanut allergy peanuts are not an option at the Honeygrows. They are vegan and vegetarian friendly and have gluten free options, too, according to the website.
