5 Minute Chicken & Quinoa Toss with Avocado & Cilantro

I feel guilty even calling this a recipe…it’s almost too easy! As always, this recipe has an awesome balance of protein (from the chicken and quinoa), carbohydrates (from the veggies and quinoa) and fat (the heart healthy kind from avocados) to help you burn fat, put on some lean sexy muscle and feel energized all day long. Makes 1 serving

Fat free cooking spray
3 to 4 ounces of cooked chicken breast (make sure it’s tender!)
1/3 cup cooked quinoa
1 or 2 garlic cloves, minced or grated
A pinch of cayenne (optional)
Kosher or sea salt (you can skip this if you’d like)
Fresh ground black pepper
Big squeeze of fresh orange juice
Big squeeze of fresh lime juice
1/3 avocado chopped
About a tablespoon of chopped red onion (optional)
Handful of fresh grape tomatoes, sliced lengthwise
Handful of fresh cilantro, chopped

Heat a small frying pan over medium high heat. Once hot, spray with fat free cooking spray. Add chicken, quinoa and fresh garlic. Saute for a few minutes until hot and garlic is just cooked. Season with salt and pepper to taste. Add a little cayenne if you want some heat. Remove ingredients from the pan. Top with a big squeeze of fresh orange juice and a big squeeze of fresh lime juice.
