Fruit Soup with Toasted Almonds

Makes about 5 cups
Serving size: about 1 cup with garnishes

Ingredients:
2 cups low fat plain Greek yogurt
1 ¼ heaping cups of frozen mixed berries (I used a frozen medley of strawberries, raspberries, blackberries and blueberries)
1 ¼ cups unsweetened almond milk
½ teaspoon pure vanilla extract
3 tablespoons of agave nectar (to lighten it up even more, use Stevia)

For garnish:
Mixed berries
Sliced toasted almonds
Lemons for zesting

Combine all ingredients (except for the garnishes) in a blender until smooth and creamy. Right before serving, top with desired garnishes (a touch of lemon zest, sliced toasted almonds, mixed berries). Enjoy!
