Sweet, warm strawberries floating on creamy gelato with toasted almonds and just a hint of chocolate shavings...sounds heavenly right? This is my take on a Valentine's Day Sundae. And believe it or not, it's actually good for you. Seriously. Forte Gelato (find it at Whole Foods or order directly from their page) is all natural and amazingly high in protein (15 grams of protein per serving!). Almonds are a heart-healthy fat and strawberries are packed with fiber, Vitamin C and other antioxidants. This recipe is simple, romantic, decadent and ridiculously good for you. Enjoy my friends.

Serves 2
2 servings of Forte Gelato (Vanilla or Chocolate)
1 tablespoon of real butter
About 1 heaping tablespoon of honey
10 strawberries, washed and sliced
2 tablespoons of toasted slivered almonds
Dark chocolate shavings for garnish
1. Let Forte Gelato sit at room temperature for a few minutes so it’s easier to remove from the cup.
2. In the meantime, heat a small frying pan over medium heat. Add butter and let it melt. Add honey and strawberries and cook, stirring frequently, until strawberries begin to break down and a sauce starts to form (about 4 to 5 minutes). In the meantime, remove Forte Gelato from container and scoop into two small bowls.
3. Pour strawberries and sauce on top of Forte Gelato. Sprinkle with toasted slivered almonds and garnish with chocolate shavings. Enjoy...and let me know what you think!
