Indian Restaurant Chain Charts Opening In Burlington
Indian restaurant chain EggHolic has big expansion plans, including opening a Burlington location this year.

BURLINGTON, MA — An Indian restaurant chain with an expanding footprint plans to add a location in Burlington. EggHolic has proposed adding a fast-casual restaurant at 10 Wall St.
A Planning Board public hearing on the restaurant was scheduled for Thursday.
Bhavana Singh, EggHolic marketing director, said the restaurant will have a seating capacity of 60 in a 2,000-square-foot space. Singh said they plan to open the Burlington location in November.

The restaurant chain currently has 15 locations scattered across the United States and Canada. EggHolic has plans to open seven more restaurants, including one in Shrewsbury.
"EggHolic chose Burlington as a location to expand because of its vibrant food scene and growing population," Singh said.

The restaurant specializes in "authentic Indian street food," specifically dishes that became popular in Gujarati night markets. Menu offerings include Masala Papad, a roasted flatbread topped with tomato, onion, and cilantro; Egg Bhurji, scrambled eggs with veggies and spices; and Desi Omelet, which is made with tomato, onion, and chilies.
EggHolic has consistently received high praise in Illinois, where the franchise was founded in 2018 and has several locations. Its egg sandwiches made top ten lists in Chicago Magazine and Eater Chicago. The restaurant also earned recognition in Chicago Reader and the Chicago Tribune.
After a Floral Park, Queens location opened, EggHolic received high praise in The New Yorker as well: "Though the setting suggests fast food (the dining room is reminiscent of a bright, clean McDonald’s), the staff offers a warm, personalized experience, and the kitchen turns out a dizzying array of casually presented but artfully executed egg dishes."
