Sweet Potato Burrito, Minus the Burrito...A 5 minute healthy and filling recipe!

A few weeks ago I had an amazing sweet potato burrito. I knew I had to recreate it in a healthier way. I also made it so it takes 5 minutes. Sounds good right? Well it was delicious BUT looked disgusting. I feel like that is the story of my life. My fiance always makes faces at my food. I swear up and down that it tastes amazing! 

What You'll Need:

1 Medium-Large Sweet Potato
1 Can of Organic Refried or Black Beans (I used Amy's Refried)
1/2 Chopped Sweet Onion

Bake or microwave the potato until it squishes when you pinch it. Cut it open and mash it with a fork. Scoop out two big tablespoons of beens and mix it together. Add your chopped onions on top. 

Suggestions: You could add a little cheese or salsa on top too! 

It was so delicious and filling! The beans with the sweetness from the potato and onions were a perfect combination. I'm definitely making this again for dinner tonight!
