Get a Taste of the Mediterranean with This Seven-Layer Greek Dip

There’s a party a minute, or at least that seems to be the case this time of year. If you’ve got a graduating senior, as I know many of you do, your fridge must have a few invites hanging on it! Maybe you’re hosting a party of your own, so perhaps you have a draft of the menu you’ll be serving hanging on that fridge as well? I have the perfect appetizer to add to that menu! Last year, I was at a cookout and my friend Leslie made this amazing dip. Not only did it taste incredible, but it looked beautiful, too.
When I bring food to a party, I always hope it’s a giant hit. The best compliment you can get is to have someone tell you that they made the recipe that you shared with them. I was flattered that the host of a recent softball dinner party told me she made this 7-layer dip that I broughtshe in to a graduation part and it went over huge! If you choose to make this tasty dip, be prepared to have the recipe on hand because I bet someone is going to ask you for the recipe!

Seven Layer Greek Dip
1 8-oz. package cream cheese, softened
1 1/2 c. hummus
1 c. seeded, diced cucumbers
1 c. seeded, diced tomatoes
1/2 c. chopped Kalamata olives
1/3 c. chopped green onions (about 3 green onions completely chopped)
1/2 c. crumbled Feta cheese

Spread cream cheese mixture into a deep 9-inch pie plate, or shallow serving dish. Evenly spread hummus on cream cheese layer. Top with cucumber, tomato, olives, feta cheese, and green onions. Cover and refrigerate 2 to 24 hours. Serve with pita chips and/or multigrain tortilla chips. Makes about 2-1/2 cups dip (16 servings).
