Strawberry Salad Recipe and an Update of the happenings at this week's Marketplace at Simpson Spring.

A Healthful Spring What a great time to think healthy! The Marketplace at Simpson Spring makes it easy. Fresh Local vegetables and fruit. Locally harvested meats and fish. Locally sourced Spring Water and flavored seltzersWheatgrass juice! Handmade, homemade baked goods using only the best ingredients for you and your entire family -  including the fuzzy ones! And all this is just the food!

  Last week we asked you to take our local spring veggie challenge and pick up something new and local to eat. This week, local food starts to get even better! 

Strawberries 

Cretiton's Farm Stand has Native Strawberries, some from Duxbury, some from Bridgewater! Berry season has begun!  Strawberries are full of healthful antioxidants. They are packed with fiber and vitamin C. It is recommended that we consume 1-2 cups of berries per day as part of a well balanced diet. And -  They are so delicious!  

 

Got Wheatgrass? 

If you don't... you should. See our friends at Indoor Organic Farm of Attleboro and learn why. Curious about Wheatgrass? They will have samples.  They also sell a wheatgrass juicer, the wheatgrass and a how to/recipe book starter set for $75. Plus they have really nutritious micro greens, sprouts available -- amazing and delicious!  

 

A Few Notes
  •  Father's Day is coming up! How about a unique twist on an old staple. Pick up this shaving set from Rosie Bud Honey Farm. It's made with real local Honey! 
  • Englenook Farm will have small bags of raw llama and alpaca fiber available.They will also have 2 different trail mixes for purchase. 
  • Proofed Bread will be offering a new entry in their "Non-Traditional" Traditional Loaves: Organic Blueberries & Blueberry Cream Cheese Bread!!! 
  • Bamboo Cafe of Brockton will be here selling prepared meals to go! 
  • Ruuska Pickles will be offering their brand new item---"fire dill pickles". They have Thai Red Chili Peppers in them as well as Habanero peppers and Crushed red pepper!  OUCH! 
  • Back by demand - Kids Toy Swap! Bring an unloved toy, get a new one! 
  • Fish is a very healthful addition to your diet! Adams Fish Market's Bluefish , Halibut, Wild Salmon. Try something new! Please place your order by email with Chris from Simpson Spring before Friday at 12:00. bert10@verizon.net 
  • Laurel Huggins & Kentwood Farm Scarves will be back this week! 
  • Did you know, you can also pre-order your bakery items. Need something specific for this weekend? Contact your favorite bakery vendor! 
  • Any charity or non profit organization may set up a table for free at our Marketplace. Contact us for details.
  • We will also have Robin Lamar-- a local Easton resident who is a Tastefully Simple representative this week. Often described with words like 'quality' and 'homespun,' Tastefully Simple products are a great compliment to some of the local ingredients you can pick up at the Marketplace.  Their catalog has a large array of products seasonings, sauces and mixes.  
Coming Up
  • The bees from Rosie Bud Farm Honey Farm will be making a field trip to the Spring in the next couple of weeks! We'll let you know when!
  • The Marketplace will be closed on July 6th.

Strawberry Salad 
with Almonds & Honey Balsamic Vinaigrette

 

YOU NEED:

  A cup or two of strawberries

Mixed salad greens (whatever you like)

Half of a red onion

Handful of sliced almonds (or your favorite nut)

Cheese crumbles of any kind (optional)

4 T aged balsamic vinegar

3 T olive oil4 tsp mustard

2 T honey

1/4 tsp kosher salt

Fresh ground pepper

 

Directions:

  1. Get your ingredients at the Marketplace! 
  2. Wash and slice the strawberries. Wash and dry the salad greens. Thinly slice a red onion
  3. In a small saucepan over medium heat, toast the sliced almonds for a few minutes until they are golden brown, stirring frequently.
  4. In a small canning jar, combine 4 tablespoons aged balsamic vinegar, 3 tablespoons olive oil, 4 teaspoons mustard, 2 tablespoons honey, 1/4 teaspoon kosher salt, and fresh ground pepper. Shake vigorously to combine.
  5. To serve, spread the greens on a plate and top with strawberries, red onion, almonds, cheese crumbles, vinaigrette, and fresh ground pepper.
