A good stock is the foundation of main courses in all the best kitchens. Once you understand the basic technique of creating a good traditional stock, you will add flavor and goodness to virtually any dish. Extract the maximum value from your vegetable and meat bills and have stock on hand to use at any time. 

A well-built soup is a meal in itself. Once you know the fundamentals of soup-making you will be able to prepare hearty, inspired meals with just a few fresh ingredients and whatever is at hand in the fridge or pantry.
