5 Things You Need to Know Today: May 28

There's even a recipe here for your barbecue. Have a great weekend!

1. June 1 deadline to apply for ESL College Scholarship. High school seniors who have participated in at least one ESL program are eligible. Deadline for application is June 1. To compete for the scholarship, send an e-mail with your name, address, contact information and tell how ESL has been a positive experience for you. The scholarship is for a senior pursuing the arts in college or one who intends to continue participating in the arts while at school. 

2. The Center School Art Fair, Thursday, June 2, from 4 to 8 p.m. at the school, is talent let loose. The most vivid imaginations and widest array of  technique of any art show in town, don't miss this exhibit by Kindergartners and first graders.

3. June 1 is also the deadline to sign up for Hopkinton Youth Soccer this fall. Children can be registered after June 1 but there is an additional cost. The deadline is early so that Hopkinton Youth Soccer Association and Boston Area Youth Soccer officials can make the fall schedules. Any child who is 4 by Aug. 31 can play. Four year olds start with micro soccer.

4: Barbecued Fish Margarita from Razzle Dazzle recipes
1/3 c Tequila, 1/2 c Triple sec, 3/4 c Lime juice, 1 ts Salt, 2 1/2 crushed garlic cloves, 1 tb oil, 3 diced tomatoes, medium, 1 chopped Onion, 1 tb minced jalapenos, 2 tb chopped cilantro, pinch Sugar and Pepper. Put fish in pan. 
Combine tequila, triple sec, lime juice, salt, garlic, and 2 t oil and rub all over fish. Cover and marinate for 1/2 hour at room temperature or up to 3 hours in the refrigerator, turning occasionally. Heat the grill to VERY hot. Remove fish from marinade, pat dry (reserving marinade) and brush lightly with 1 t oil and grind pepper over the surface. Cook on a greased grill 4 minutes per side, or until flesh is opaque. Boil remaining marinade in saucepan for 2 minutes, remove and discard garlic cloves, and spoon a little over the fish. Just before serving, combine tomatoes, onions, chilies, cilantro, sugar and salt to taste. Spoon on side and serve.
