I was at Wegman’s recently and I spied maroon carrots. They were a beautiful, dark purple color which I know means they’re even more nutritious that regular carrots. The deep purple, blue or red color on fruits and some vegetables comes from an antioxidant called anthocyanin. It’s great for brain and eye health, and may protect women especially from heart disease. As soon as I saw them, I knew I had make some kind of a fun food out of them.
These Raw Rainbow Noodles are perfect to make with a spiralizer, but if you don’t have one, a mandoline slicer, or even a julienne vegetable peeler works just fine. The noodle like-strips are a clever way to get the family to eat more vegetables, and they’re just plain pretty to look at and fun to eat. If you can’t find purple carrots, extra plain carrots are fine, or beets would be beautiful! Be creative – the light dressing will work with any mild tasting, peel-able vegetable.
