Casual Burrito Chain Planned For MetroWest Shopping Center

HUDSON, MA — A fast-casual burrito chain is planning a new restaurant in Hudson.

Bubbakoo’s Burritos will open at RK Hudson Towne Center, 213 Washington St., RK Centers, the shopping center's operator, announced this week. The company said an opening date has not yet been announced.

The restaurant is a Mexican-fusion fast-casual chain that began in New Jersey in 2008. It has more than 150 restaurants in 17 states, but there are no operating locations in Massachusetts. There was a location in Boston's Allston neighborhood, which has since closed.

Bubbakoo's serves up burritos, bowls, tacos, quesadillas, nachos, fries and desserts, according to its menu.

The eatery will join the town center, located along Route 85 at 191 to 221 Washington St., which totals 110,682 square feet. The shopping center includes popular stores, including Shaw's Supermarket, Peto and Dollar Tree.
