The adventure begins at The Farm Institute in Katama where we will experience the rhythm and hum of a working teaching farm. Meet TFI’s animals, visit its vibrant gardens, and learn about the different breeds of cows and how the characteristics of the land and Vineyard weather contribute to the creation of special cheeses. Along the way, we also gather items to use in the design of our own edible centerpieces for our dining tables.

Then we will head into the kitchen with head cheesemaker Jacqueline Foster—the brilliance behind the new cheeses at Chilmark’s Grey Barn Farm. She will take us through the history of cheesemaking, and you’ll partner with other students to make your own ricotta and mozzarella.

After a fresh lunch on the farm, we will sample six different cheeses and discuss the styles and flavors of new American farmstead varieties. By the end of the day, you will have the knowledge, experience, and recipes to make your own cheese at home, and the flair for designing edible centerpieces from goodies growing right outside your door.
