Move over, Medfield, there's a new food truck in town!

This is no ordinary food truck; it is the Blazing Hearth Pizza Mobile Catering truck!
Medfield residents, Jillian and Skip Weldon are the owner/operators of this brand new business, and they are making a lot of dough, pizza dough that is. Their website launched only a week ago, and they have been testing out their pizzas in Medfield and beyond.

“This one of a kind mobile catering kitchen creates an instant party at your event”, boasts the Blazing Hearth flyer. Now that is pretty impressive, but even more impressive is this is a year round business so you don’t have to wait until the snow melts or the temperatures rise to enjoy this distinctive experience. This extraordinary truck caters events in Winter, Spring, Summer and Fall. “We really love being outdoors in the wintertime and have perfected a cold weather pizza recipe” said Jillian.
Recently, this pizza party on wheels truck, parked in The Center at Medfield lot on Ice House Road, and cooked up a variety of pizzas for the Seniors’ lunch. Town Hall employees were also invited to stop by and sample pizza. Yours truly was among the samplers, and in my humble opinion, it was GREAT (especially the honey bacon pizza)!
I sat down with Skip and Jillian, who have been married for 27 years and moved to Medfield as newlyweds, to find out more about owning a pizza truck and catering business and I couldn’t help but notice how both of them never stopped smiling when talking about this new venture.
Skip had worked 20 years in the restaurant business, but he was on the corporate marketing end; he was not making dough and cooking pizzas. He quickly pointed out, “We have always wanted to start our own business, since the time we were married!” Taking on this challenge and owning their own business, building a brand, and enjoying the satisfaction of making people happy for a couple of hours at a pizza party, is exactly what they want to do. They also want the community to know that once the business has grown, they feel a responsibility to “Give Back” to the town, and hold events so “everyone can have this kind of experience”.
Jillian always enjoyed cooking, but found it more of a chore when their children were young. Now being empty- nesters, she finds this kind of creative cooking and menu making, “fills the void”.
Skip and Jillian are bright, ambitious, knowledgeable, and experienced people, but they quickly realized how much they would need to learn, from Pizza School to QuikBooks, and are still learning about owning and operating this kind of business.
Living in Medfield and starting a unique business has been a joy for the Weldons. “Everyone in Medfield has been great, and everyone who sees the truck suggest news ways to use it; the small business network in this town has been incredibly helpful to both of us” said Skip.
A few things that they had to do in order to get the business up and running, was to find garage space for the truck, and shared kitchen space from another kitchen in town for food preparation. They sent out hundreds of emails, and were overwhelmed with the positive responses they received from the Medfield community. Even if the business or organization couldn’t accommodate their need, they were often referred to someone else. They finally did find both garaging and shared kitchen space in Medfield; then it was on to making pizzas!
In addition to “stress testing” the oven for the Seniors lunch, they were invited to take part last Saturday at the All Pro Celebrity Tailgate Party on Rt. 1 in Foxboro across from Gillette Stadium before the Patriots game! They cooked and served 125 pizzas in an hour and a half, and WEEI celebrity, Glenn Ordway, stopped by and loved their pizza. They were also visited by former NE Patriot, Fred Smerlas and Davio’s Chef/CEO, Steve DiFillippo.
The Weldons have learned making pizza dough is an art, a craft, and it involves math and science! They also learned about different kinds of flour and the importance of flour temperature, air temperature and water temperature when making dough. “There is no such thing as a perfect pizza” said Skip, “but using science will get you close.”
If you don’t get a chance to experience Blazing Hearth Pizza this winter, spring is right around the corner and it is a time filled with family parties, Graduations, Sporting banquets, Weddings, and Corporate events. The Weldons are hopeful that Medfield residents and businesses will consider Blazing Hearth Catering for their parties!
In addition to watching pizza cook in their 900 degree wood fired Mugnaini Oven, their menu includes salads, desserts and the truck has dual beer taps, and a 60” Flat Screen TV to entertain your guests. What more could you want?
“Making a great pizza and getting positive feedback gives us great satisfaction”, said Skip.
