In this country, Chia seeds have been used to grow green hair on ceramic heads, but did you know they are actually very nutritious?  Chia seeds are rich in Omega 3 fatty acids, protein, fiber and minerals. Indigenous people of South America harvested Chia as a staple crop and their messengers used the seeds as an energy source during long distance runs. Chia seeds are now sprouting up in health food and gluten free sections of markets. Chia has unique and healthful characteristics.

Chia has the ability to absorb a great deal of water. When the seeds get wet, a gel like substance surrounds the seeds. This is due to the seeds soluble fiber. This is great news for those cooking gluten free, the seeds (or Chia flour) can help make baked goods moist. The trick is to use Chia sparingly and keep an eye on baking times because the addition of Chia may add to your cooking time. Chia also works as a substitute for eggs or oil.

To make Chia gel: two cups water to ¼ cup Chia seeds. Mix and let stand for five minutes then mix again and let stand until gel is formed. Covered and stored in the refrigerator, this mixture should stay fresh for a few days. If using Chia as egg replacements use ¼ cup gel to replace one egg.
