Eat This! Corn Fritters (just another excuse for me to eat pancakes really)

After the beautiful weekend we had , it really had me longing not only for a descent guy who doesn’t have commitment issues but also for summer!  Since my latest break up I have been eating pancakes on a daily basis. Buckwheat and whole wheat pancakes(because I’m still losing weight)…but none the less pancakes. Hands down one of my favorite offerings that summer brings us is CORN! Sweet golden sunshiny savory corn! So this week we are combining my craving of the week pancakes and some summertime love and making corn fritters!

Now obviously corn is not in season so ( Mom cover your eyes)we will be using frozen roasted corn.  If you have a chance to make it out to Trader Joes they have “roasted corn kernels” which can really add a little more depth to this dish. You can literally take your favorite whole wheat or buckwheat pancake mix (prepare as directed) and add corn and some seasoning and make the perfect grilled fritters. Or just as easily throw together a few ingredients from scratch and get the same tasty result. I took some shrimp and grilled them up along then topped the fritters with a little sour cream and pureed chilies.

Usually I would recommend these as a great dish to serve on a date with some sparkling wine and a salad but I am a little bitter this week and will be enjoying this with a few shots of tequila a copy of Bridget Jone’s Diary and a side of alone again!  Cheers!

1 cup prepared pancake batter

1 cup frozen roasted corn kernels

Coconut oil

Heat oil in skillet over med high heat . Drop ¼ cup batter cook 2-3 minutes on both sides.

Got it Together Recipe

1 ½  cup frozen roasted corn Kernels

1 egg beaten

1 cup whole wheat flour

2/3 cup milk

1 tsp salt

1 tsp sugar

1 tsp baking powder

Coconut oil

Mix all ingredients together in bowl (except coconut oil) Heat oil in skillet over med high heat . Drop ¼ cup batter cook 2-3 minutes on both sides.
