Eat This! Rainy Weekend Hungarian Goulash Two Ways!

Well looks like we are in for a crappy rainy weekend..but the good news is I have an amazing recipe for one of my favorite rainy day dishes…Goulash. When I was staying in Germany I ate a lot of this before I would go out for a long evening of drinking and dancing usually followed by bratwursts in the early evening hours on our way home.

Goulash is basically a beef stew and it is usually served over noodles.(I use Egg noodles)The  first night I will usually make a big pot of it and serve it the traditional way and then the next night switch it up a little bit and serve it shepherds pie style layering the goulash on the bottom then using corn for the vegetable and topping with some savory mashed potatoes … It is super flavorful and an unexpected twist from the normal shepherds pie and a great way to repurpose the left overs. (FYI I made the goulash Wed and last night the shepherds pie version that I brought into work and everyone is loving it!)

  • 2 tbsp Olive oil
  • 2lbs Stewing beef cut into pieces
  • ¼ cup whole wheat flour
  •  1 large Onion, diced
  •  2 clove Garlic, finely chopped
  •  1 green pepper diced
  • 1 red pepper diced
  •  2 tbsp tomato paste
  •  2 tbsp Paprika
  • 1 can tomato sauce
  •  ¼ cup dry White wine
  •  ½ cup beef stock, home-made or shop-bought
  •  2 tbsp flat leaf Parsley, chopped
  •  black pepper
  • ½ cup Soured cream

Pre heat oven to 300.In a large pot over medium heat add 1 tbsp olive oil .Toss the beef in the flour and then add to the pot. Stirring and browning . Add remaining olive oil and garlic onions and peppers sauté another 3- 4 minutes until softened Then add all ingredients EXCEPT the sour cream. Stir another 2 min.Transfer the mixture into casserole dish and then bake for 1 hour. Stir in sour cream just before serving. And serve over noodles or with some crusty bread.

  • The next night layer bottom of casserole dish with goulash then layer with corn then with garlic mashed potatoes and bake at 400 for 20 minutes.
