Ebi Sushi was opened in 2011 by Jose Garcia, who worked to become a Japanese cuisine chef for a decade after immigrating from Guatemala. Prior to opening his own business, Garcia worked at the Blue Fin Japanese restaurant in Porter Square.
For the new ramen eatery, Garcia and his wife, Estefania, are partnering with Tsurumen owner Masuo Tsuyoshi Onishi to launch Dashizen later this year.

āThis isnāt just a move for us, itās homecoming. Weāre growing, but the heart of who we are and where we belong remains unchanged,ā Garcia said in a statement. āOur secret is the passion and consistency of our incredible team of Latino chefs blending tradition with creativity.ā
Tsurumen first came to Somerville in 2015 with a unique concept. Every 200 days, the menu was changed to reflect and represent a chapter of Onishiās life. Once the first 1,000 days of the concept was complete, the business remained in Somerville despite its original plans to be temporary.
