Strip T's Maslow: Boston Chefs will Pull Away from Molecular Gastronomy

The Boston Globe spoke with Tim Maslow as part of a story predicting trends that will hit Boston in 2012.

When the Boston Globe sought out insight into what trends will hit Boston restaurant scene this year, one of the chefs they turned to was Tim Maslow of Watertown's Strip T's.

Maslow said he thinks while molecular gastronomy – the scientific discipline that studies the physical and chemical processes of cooking and which is used in a modern or avant-garde style of cooking – is growing among bartenders, Boston area chefs will move away from it.
