The (Gluten-Free) World Beyond Wheat

Need to pursue a gluten-free lifestyle? Curious about exploring new grains? Want to incorporate more flavor and nutrition into your meals? During this two-part class, we’ll talk about how to use gluten-free grains, from making pilafs to baking muffins to DIY cereal and granola. We’ll also get inspiration from various ethnic traditions–in many places where wheat is not king, populations have relied on crops like teff, sorghum, millet, corn, rice, buckwheat (which has nothing to do with wheat), and a host of other grains, nuts, and seeds that can be made into flour.
