Apple Crisp

Sometimes you just have to have that sweet ending to your meal.

I've been craving desserts lately. Instead of spending more money than I want to on specialty items (gluten free - dairy free is a hard thing to come by), I decided to take a look in my kitchen and see what I could whip up to satisfy my sweet tooth.

This is what I came up with: Apple Crisp

*Preheat oven to 375 degrees*

Filling:

2 granny smith apples, sliced

2 fuji apples, sliced

2 tbsp sugar

1 tsp nutmeg

1 tbsp cinnamon

1/4 c brown sugar

mix everything together really well, until all the apple slices are coated evenly (as I sliced the apples I added a little lemon juice to keep the browning to a minimum).

Topping:

2 tbsp Bob's Red Mill GF Pancake Mix

5 tbsp Oats

1 tbsp Cinnamon

4 tbsp Brown Sugar

2 tbsp butter, melted

mix all together until it has a look of wet sand.

*Bake in a pie pan without topping for 30 minutes. 

*Add topping and bake for another 20-30 minutes

I've made a few GF pie crusts, but I haven't found one that I really liked. I did try a graham cracker crust with this one to make it an apple pie and it did ok. Personally, I thought it was a little mushy and I could go without it next time.

Optional Graham Cracker Crust:

16 GF Graham Crackers

2 tbsp melted butter

1 tbsp sugar

*Place in a food processor and mix until wet sand appearance.

*Pour into pie pan and use a small measuring cup to press firmly up sides and on the bottom.

Calories Breakdown:

Filling: 635 total calories

Topping: 344 total calories

Optional crust: 1095 calories

Makes 8 slices.

With crust: 259 calories/slice

Without crust: 122 calories/slice

** So Delicious makes an excellent coconut milk based vanilla bean ice cream that was a perfect addition to my plate. **
