Gluten Free Pancakes

MmmMmm pancakes.....we ALL get that craving. Those delicious, diner buttermilk pancakes with butter and warm syrup....yum!

Gluten Free pancakes can be just as delicious! And to make Mom's (or Dad's) morning even easier, Biquick makes a great gluten free mix.

Gluten free "goodies", as I call them, like breads, pizza crusts, pancakes, pie crusts, cakes, brownies, cookies, etc. etc. are just as good as their gluten-filled counter parts BUT they are VERY high in calories. It's ok to indulge now and then (I encourage it) but do it with smaller portions.


Ingredients:
1 cup mix
1 cup Almond Milk
2 tbsp veggie oil
1 egg
* mix ingredients until smooth
* spray pan with non-stick spray
* pour batter, wait for the bubbles
* flip, cook til golden brown (1-2 minutes)
** makes 10 small cakes **


Calorie Breakdown:
80 calories per pancake

PS - unless you're feeding a pancake aficionado, even the gluten-eaters won't taste the difference!

Tip: Almond milk is a GREAT alternative to regular cow's milk. There's more calcium,  fewer calories per serving and it has good flavor.

Tip: Bob's Red Mill and King Aurthur's also make great pancake mixes.
