Green Bean Salad

Give your side dish a make-over!

Green beans as a side for dinner can get a little boring. Change it up by adding a couple ingredients to give it a whole new look and taste. 

Ingredients:

Green Beans, washed and trimmed

Feta Cheese, crumbled

1/2 red onion, sliced

walnuts, chopped

3 tbsp. red wine vinegar

salt & pepper

1/4 - 1/2 cup olive oil

Directions:

Boil the green beans until al dente (still have a slight bite to them, don't make them mushy).

While the beans are boiling, mix the red wine vinegar, salt and pepper in a medium size bowl.

Drain the beans.

Slowly drizzle olive oil into the vinegar mixture, whisking quickly to create an emulsion. Add enough oil to just get it all mixed together. Taste as you go so it doesn't get too oily. (you just created a basic vinaigrette :) Go you!) 

Place beans in bowl with vinaigrette; mix in feta cheese, red onion, and walnuts.

I don't have measurements for the nuts, cheese and onion because everyone has different preferences. Feta can be a little strong so some people only like a little bit. The same goes for the red onion. If you aren't sure go light at first and try some. You can always add more. It's hard to take stuff out once it's been mixed it. 

I don't have a calorie breakdown for this dish due to the variation in the amount of different ingredients but 1/2 cup of green beans is around 20 calories. Keep in mind that cheeses, oils and nuts are generally high in calories, but a little bit goes a long way. That should give you a starting point.
