Apple Valley City Council to Discuss Cub Foods Construction Project
Developers want to reduce the size of the Cub Foods store on Cedar Avenue by 15,000 square feet and to build a 7,000-square-foot building in the store's parking lot.

The Apple Valley Cub Foods property on Cedar Avenue could be in for a makeover.
At its meeting tonight, the Apple Valley City Council is expected to vote on whether to allow the Cub Foods building to be reduced by 15,000 square feet and to permit construction of a multi-tenant building on the north edge of the grocer's parking lot.

The city’s planning commission voted unanimously earlier this month to grant developers the necessary permissions to move forward.
Now, it’s the council’s turn to voice its say on the project.

Plans call for roughly 15,000 square feet to be removed from the east end of the 108,527-square-foot building as part of a renovation project, city documents say. The project also calls for moving the store’s pharmacy drive-through from the front of the building, which faces 153rd Street, to the east end of the building.
Construction would begin after March 1 of next year, according to a letter from building developer Oppidan, a Minnetonka-based company.
Along with renovating the Cub Foods building, developers want to construct a 7,000-square-foot outbuilding near the north edge of the Cub parking lot. The building would be on the east side of the parking lot entrance at 153rd Street.
As many as four tenants could set up shop in that building.
Eventually, a second outbuilding—potentially housing a restaurant—could be constructed on the west side of the parking lot entrance, according to city documents. However, approval is not being sought for that project at this time.
The construction would reduce the number of parking spaces available in the Cub Foods lot from 602 to around 400.
To move forward with the proposal, developers are asking the council to:
• Replat the property from one lot to three lots
• Adopt a draft resolution approving the site plan/building permit authorization to allow for construction of the 7,000-square-foot outbuilding.
