A deconstructed quesadilla puts a modern spin on traditional Mexican ingredients.

"I'm from the area and Chef Ricardo Carmona is from Mexico City," Ryan McGunnigle, owner of Mexican Restaurant in Rosemount explains.

This simple explanation goes a long way to describing the philosophy of the menu at Las Tortillas. While dedicated to preparing fresh tortillas, authentic family recipes, and handmade ingredients, there is also an original approach to age-old dishes.

Puerco verde quesadilla, a heaping combination of tortillas, carnitas, salsa and cheese, is what Ryan calls "our interpretation of a quesadilla" and certainly looks like a new version of the traditional recipe. The experience goes beyond looks, as the tangy, crispy and rich flavors mix in a way that is both new and familiar.
