• Minnesota meat plant plans to expand regional processing capacity (meatpoultry.com) — A new 10,000-square-foot Farmers Union Processing + Meats plant is opening in Staples, aiming to boost local livestock processing and regional food resilience. Starting as custom-exempt and targeting USDA certification by July, the $8 million facility will serve farmers across a five-county area and was backed by multiple state, federal, and regional partners.
